Colterra owner/executive chef Bradford Heap received classic European training from culinary legends like Alain Ducasse, Georges Blanc and Carlo Cioni. He has served as guest chef at the prestigious James Beard House and had successful stints at Full Moon Grill and Chautauqua Dining Hall. Colterra’s menu favors ingredients in season from local farms and growers, naturally raised hormone- and antibiotic-free meats, and sustainably harvested fish from around the world. Heap’s ability to create simple clean flavors from ultra-fresh local produce has earned him a loyal following. The cuisine is inspired by the flavors of Southern France and Northern Italy. Chef Heap invites guests to try a variety of tastes and sip various wines by the glass from a substantial wine list.
