Once again, Jax takes the prize for best seafood in this landlocked part of the world. Adam Reed, executive manager of the three Jax Fish House restaurants, Boulder, Denver and Fort Collins, says, “We have had a steadfast commitment to the freshest seafood since we opened 17 years ago. Once again Jax takes top honors for the best seafood in this land-locked county. Much of the credit goes to world-class, award-winning chef Hosea Rosenberg, who believes that flavor is paramount. With that in mind he creates innovative dishes that capture the essence of fresh fish and fresh produce – whenever possible using produce from local farmers as well as organic and natural products. “Another important reason for our success is our loyal staff of 8, 10, and even 15 years, when the restaurant opened,” says manager Lee Sandoval. “They’ve helped build a clientele and atmosphere; everyone here provides service. And the food is very fresh and healthy, with deliveries every day.” Jax’s famous Raw Bar features a variety of fresh oysters, clams, chilled crabs and lobsters, all flown in daily. Favorite dishes are Colorado striped bass and Nicoise olive-dusted Alaskan halibut. Blue plate specials are popular: jambalaya on Sunday, old school tuna on Monday, New Zealand bluenose on Tuesday and paella on Wednesday. Uniquely Jax is the brick wall where well over a thousand customers have written their names (some over other customers’ names), and the “Wall of Fame’” lining the bar that is covered with photos from alumni, employees and regulars showcasing their catch of the day.
