The cuisine at Colterra is inspired by the flavors of Southern France and Northern Italy. Owner/Executive Chef Bradford Heap received classic European training from culinary legends like Alain Ducasse, Georges Blanc and Carlo Cioni. He has served as guest chef at the prestigious James Beard House and had successful stints at Full Moon Grill and Chautauqua Dining Hall. Heap’s love of French and Italian cooking and desire to work intimately with local farmers, ranchers and purveyors is at the root of his vision. He strives to use seasonal, fresh, local ingredients to produce original flavors in each and every dish. The organic gardens at Colterra allow him to grow some of his own produce and herbs. Heap’s ability to create simple clean flavors from ultra-fresh local produce has earned him a loyal following. He invites guests to try a variety of tastes and sip various wines by the glass from a substantial wine list.
